In the story there is a scene where they are chowing down on Mexican
food.
To play on a theme from the story, how about a recipe?

Enchilada Casserole.

(1) Bag of corn tortilla chips. (Crushed fine)
3-5 pounds of ground beef (cooked and drained)
(1) Bag of shredded Mexican Cheese
(1) Can of chopped Green Chilies
(1) Can of Cream of Mushroom Soup
(1) Can of Evaporated Milk
(1) Can of Enchilada Sauce (red not the green)
(1) Can of sliced Black Olives
(1) Bunch of Green/Spring Onions

Cook hamburger and drain. Add whole can (juice and all) of green chilies, then add all the other canned goods. Cook on low to marry the seasonings.
Meanwhile, spray casserole pan with non-stick cooking spray and spread 1/2 the bag of crushed chips down. Next spread half the hamburger sauce on top, then 1/2 the bag of shredded cheese.
Repeat the process.
Bake at 350 for about 40-45 minutes or until all golden brown and bubbly. Let cool about 15 for casserole to set.
Serve with guacamole, sour cream, tomatoes... whatever you wish.
:)
To make things fun, I’ll give out a copy (ebook) to one commenter who tells me if they have plans this summer and where they are going?
